Healthy Chicken Tikka
If you have always been a sucker for Indian food, these low fat Chicken Tikka recipes will melt your taste buds. Both serve four people with a little something new on the side as garnish. Here is how to make Masala Chicken Tikka with Cashew Nuts
This recipe serves four people and only needs an hour of prepping and cooking time. The ingredients you need include:
One cup of yoghurt (low fat)
One quarter cup of grated onions
Four pieces of skinned boneless chicken breasts (pound to even thickness)
Black pepper (freshly grounded)
Quarter cup cashew nuts (raw)
One half teaspoons grapeseed oil
1 teaspoon ginger (freshly grated)
Half minced jalapeno
One half tea spoons garam masala
One half teaspoons crushed tomatoes
One can of crashed tomatoes
One half cup kosher salt
2 Tsp chopped cilantro
Half cup boiling water
Salt to taste
Prepping the Marinade
Put the chicken in a re-sealable plastic bag and add yoghurt, a portion of the grated onions then season with pepper and salt. Shake the mixture and leave to marinate for an hour in a fridge. Next, soak the cashew nuts in the hot water and leave for at least an hour as well.
The Masala Sauce
Now add the remaining onions in a skillet then cook with the oil in medium heat. Stir frequently till the onions are tender then add tomato paste, garlic, garam masala, ginger and cook this for 2 minutes. Add the tomatoes, salt and sugar then leave the mixture to simmer for about 15minutes. As you let the sauce cool, preheat your broiler and remove the chicken from their marinade. Place them on the baking sheet and cook in the broiler for 5minutes (ensure the baking sheet is 6inches from the heat source).
Finally blend the cashew nuts adding the masala sauce until you get a fine puree. Finally combine the cashew nut puree and the chicken and heat the mixture until hot, adding the cilantro leaves last. Serve hot with basmati rice and you have yourself an enriching meal.
A Difference Recipe
The beauty of Chicken Tikka recipes is in the ability to vary the ingredients to create something different at the end. The same ingredients above will suffice but now add different flavours like Tikka spice powder or fresh chopped coriander. Instead of white basmati rice a second time, how about its variant, brown basmati, which adds a whole grain flavour to your meal.
